The blade of the Gyuto knife is made of stainless molybdenum-vanadium steel AUS-8, which has a durable sharpening hardness of 58 HRC. The comfortable plastic handle does not slip or get dirty, and the "full tang" mounting with ABS plastic lining runs along the entire length of the handle and holds perfectly in the hand. The knife has a light weight and a double-sided sharpening.
