Santoku knife made of AUS-10 Meteora steel is a traditional tool in Japanese cuisine.

It is distinguished by the special geometry of the blade: the Santoku shoe descends to the cutting edge, and the center of gravity is shifted forward. This design allows you to wield a knife without lifting its tip from the board and without holding the tool in the air.

Like other hand-forged steel knives, it should be washed by hand, without using a dishwasher. After washing, be sure to wipe the blade dry. It is especially important to observe this condition, because the knife is made of high-carbon steel and requires additional attention.
