Description
The Gyimyakesh Sultan meat cleaver is a massive Gabala-style knife of Azerbaijani origin, designed for chopping meat, cartilage, light bones and preparing minced meat without a grinder.
Brief
Gyimyakesh is a heavy two-handed kitchen cleaver. Thanks to its massive blade and spiral loop at the end, the tool helps chop meat faster and work confidently with dense ingredients.
Functionality
The cleaver is suitable for chopping meat, separating meat from bone, cutting dense ingredients and preparing minced meat. It can be used with meat, cartilage and light bones. The special shape helps reduce sticking in wooden boards and helps protect the cutting edge when the blades touch each other.
Materials
The cleaver is made from a single sheet of St45 structural carbon steel. The steel thickness is 6 mm, and the working blade length is 26 cm. The handle is made of ash wood, treated with oil and designed for a comfortable grip. The blanks are hardened in a forge, then forged with a mechanical hammer and finished by hand.
Care
The working blade is protected against corrosion with a blackened finish, created by treating the steel with oil and heating it over fire. After washing, the cleaver should be dried immediately and stored in a dry place. Do not wash it in the dishwasher. For long-term storage, the blade can be wiped with vegetable oil or animal fat.
Ergonomics
The spiral loop at the end shifts the center of gravity toward the blade tip, making chopping and mincing meat easier. The ash wood handle sits comfortably in the hand and helps maintain control during two-handed use.
